Simon obtained a bachelor’s degree in Food Technology and a master’s degree in Biotechnology from the Biotechnical Faculty of the University of Ljubljana. His academic and research focus has primarily been on plant genetics, although he also gained experience working in a microbiology laboratory.

In his free time, he enjoys playing basketball, watching movies, and assisting with wine production.
